Technical Abstract: The aflatoxins are a group of mycotoxins capable of causing disease in animals and are suspected human carcinogens. The Food and Drug Administration has established a regulatory level of 20 ppb of aflatoxin B1 (AFB1) in human food. This book chapter reviews the literature on the use of capillary electrophoresis for detection of aflatoxins and provides a specific protocol for the measurement of AFB1 in maize.
