Technical Abstract: This chapter is intended to provide a timely overview of the current state of research at the intersection of nutrition and epigenetics. I begin by describing epigenetics and molecular mechanisms of eigenetic regulation, then highlight four classes of nutritional exposures currently being investigated for their potential to induce epigenetic alterations: dietary pertubation of one-carbon metabolism, prenatal energy restriction/growth retardation, assisted reproductive technologies, and histone deacetylase inhibitors. The chapter concludes with a discussion of outstanding questions in the field, and an elaboration of epigenetic technologies available to nutrition scientists.
