Interpretive Summary: Ricinoleate, a monohydroxy fatty acid in castor oil, has many industrial uses such as the manufacture of bio-based products, lubricant, plastics, paints and cosmetics. Trihydroxy fatty acids have different physical properties, e. g., viscosity, pouring point, from those of ricinoleate, and can be used in manufacturing bio-based products with different physical properties. We report here the identification of a new trihydroxy fatty acid in castor oil. The structure of this trihydroxy fatty acid was proposed. The biosynthetic pathways of polyhydroxy fatty acids were also proposed.

Technical Abstract: Castor oil has many industrial uses. Molecular species of acylglycerols containing monohydroxy, dihydroxy and trihydroxy fatty acids in castor oil have been reported. We report here the identification of acylglycerols containing triOH18:2 fatty acid in castor oil. The structure of this novel fatty acid was proposed as 11,12,13-trihydroxy-9,14-octadecadienoic acid by the mass spectrometry of the lithium adducts of acylglycerols purified by HPLC. The fragmentation pathways of 11,12,13-trihydroxy-9,14-octadecadienoic acid were proposed. We also proposed the biosynthetic pathways of polyhydroxy fatty acids in castor.
