Interpretive Summary: Technical Abstract: Near infrared (NIR) reflectance spectroscopy was evaluated as a rapid technique, to determine the trans-fatty acid content of ground cereal products. NIR spectra were obtained with a dispersive spectrometer and trans-fatty acids determined by modified AOAC Method 996.01. First derivative PLS1 models for trans-fatty acids were developed using five wavelength regions based on lipid absorption. PLS2 models were also developed based on the five wavelength regions and on correlations among trans-fatty acids, cis-fatty acids and total fat content. The optimum wavelength regions for prediction of trans-fatty acids for PLS1 were 700-2498 nm and 1600-2200 nm and for PLS2 was 1600-2200 nm. The PLS2 model improved prediction of trans-fatty acid content from SEP of 1.32 to 1.05% (range 0.05-11.59%) and r2 from 0.92 to 0.95 (1600-2200 nm region). The PLS2 model was suitable for screening of ground cereal products for trans-fatty acid with the 1600-2200 nm region containing the most information for model development. |
