We have a pilot scale version of a commercial hide-on carcass wash system that combines washing action with belt scrapers to enhance hide cleaning. By combining this equipment with hot water and then the pre-tanning soaking solutions that loosen the hair, an expanded pattern line area can be dehaired and cleaned such that the risk of carcass contamination is greatly reduced. The experiment will include three hide treatments: 1) hot water with scraping, 2) presoaking solutions with scraping, 3) hot water then presoaking solutions then scraping. Prevalence and enumeration of Salmonella and E. coli STEC (O157:H7, O26, O103, O111, O121, O45 and O145) will be determined before and after treatment on 20 replications per treatment on naturally contaminated hides.
