Identify einkorn accessions with desirable agronomic, nutritional, and saline tolerance traits for performance within organic farming and marketing systems in the Northern Great Plains.

Conduct screening and variety trials of einkorn in laboratory, greenhouse and growth chamber. Agronomic, nutritional and quality analyses will include: screening for salt tolerance at the seedling stage to provide phenotypic data for genotyping and identification of the presence and frequency of salt-tolerant genes, field testing in replicated experiment for adaptation, dry matter partitioning and yield potential; protein content and composition as to gliadine (Gli-A1 and Gli-A2) and glutenin (Glu-A1) alleles, their frequencies and association with protein content; starch composition (amylose and amylopectin) in relation to digestibility and protein content, and carotinoide content and its predictability by kernel color analyses.
