Objective:
To determine meat product quality of sheep and goats finished on pasture.

Approach:
Proximate analyses (water, ash, protein, fat, and fatty acid profiles) will be conducted in the laboratory using loin muscle tissue collected from grazing sheep and goats finished on pastures established with different herbages.
