Evaluate PNW Soft White Wheat for end-use suitability for Kraft-Nabisco.

Perform complete milling and baking analysis of soft white spring and winter wheat varieties and advanced breeding lines from two Washington locations. Documents Trust with Kraft. Log 39423. Formerly 5348-43440-005-07T (12/10).
This subordinate contributes to the parent project: Objective 1. In cooperation with breeders and geneticists, identify and facilitate the manipulation of genetic variation of end use quality characteristics in western wheat. This report serves to document research conducted under a cooperative Trust Agreement with Kraft-Nabisco. The parent project is 5348-43440-006-00D. The Trust involves mostly proprietary information with the cooperator concerning the evaluation of end-use quality of soft white wheat varieties in Washington and Idaho. All wheat samples were obtained, and milling and baking analyses were completed; analysis and report were provided to the cooperator. Comprehensive analysis of flour properties as characterized by Solvent Retention Capacities (SRC), SDS Sedimentation volume and cookie diameter. In general, varieties with lower values of SRC water, sodium carbonate and sucrose were preferred.
