1b.Approach (from AD-416)
Both parties will examine vine characteristics and major chemical components responsible for any differences, or similarities, between differing vineyard practices. We will use simple spectrophotometric methods in addition to more complex analytical methods (HPLC), to better understand qualitative and quantitative effects on grape phytonutrients. Radiant Zone Drying (RZD) is an innovative dehydration process with the potential to be a more cost-effective alternative to conventional drying methods (spray drying, freeze drying, refractive window drying, drum drying, etc). Six procedures were tested to understand their influence on cranberry powder quality after RZD. The formulations consisted of either of two cranberry starting materials (puree or concentrate), different drying aids, pH adjustments, etc. The resulting RZD powders were analyzed for moisture, color, individual and total anthocyanin, and total phenolics. RZD products retained a high proportion of phenolic concentration and color judged against their starting material.
