Our recent research has focused on dietary modulation of pattern recognition receptor (PRR)-mediated inflammation and consequent risk of chronic diseases.
It is now well recognized that PRR-mediated inflammation leads to the development and progression of many chronic diseases including insulin resistance, diabetes, atherosclerosis and cancer. In previous studies by Dr. Hwang’s group revealed that PRR-mediated inflammation can be promoted by saturated fatty acids, but inhibited by n-3 polyunsaturated fatty acids. Further studies with animal models by many other investigators validated that dietary saturated fatty acids indeed enhance such inflammation and consequent insulin resistance. Far reaching implication of these results is that risk of insulin resistance and other chronic diseases can be modulated by types of fat we consume every day. Further studies by Dr. Hwang’s group also demonstrated that certain bioactive phytochemicals can inhibit PRR-mediated inflammation suggesting that risk of insulin resistance and other chronic diseases can be reduced by such phytochemicals in our diet.
