Alfalfa (Medicago sativa). Alfalfa originated in the Middle East, and both domesticated and related perennial species are now found throughout Eurasia—all the way to Siberia. It is grown in every U.S. state, mainly for livestock feed. Unlike corn and other grass crops, alfalfa obtains nitrogen from the air, which boosts production efficiency and savings.
