After analyzing hundreds of samples, ARS researchers wrote the definitive
report on the composition and properties of honeys. These findings made it
possible to detect the addition of other substances to honey. A side benefit was
discovery of a new sugar in honey, which was named erlose, after ARS's Eastern
Regional Research Laboratory.
